I am observing traffice from my FX30s to EC2

What traffic is this going into 56830 and 5686 ?

We have no application that is communicating with AWS. There is quite a lot of UDP traffic per day

You can capture wireshark log on the module

You might also shut down legato to see if this is related to legato stuff.
Or you can start the application one by one to see which application is generating the traffic.
